Effective ventilation system for any restaurant business is an important part of a design. The ventilation system which will extract and separate the fumes, smoke and other particulate matter from the kitchen area. The ergonomically well designed hood with sufficient capture velocity is essential part of ventilation system.  This kitchen hoods usually attached to the top of the ovens, Burners and any food preparation area. The different types of hoods such as Wall mounted Hood, Ceiling mounted hoods, and Downdraft hoods are used depending upon food preparation area.

We also need to introduce Make up air, air is continuously exhausted outside of the restaurant at a 100& rate, so it’s very important to take in an ample amount of air from outside at a rate of 80%. This is makeup air- it compensates for the exhausted air. Without it, it can cause negative effects in the restaurant building such as poor air quality, back-venting of combustible gases, drafty or stuffy areas, and reduced energy efficiency

Electrostatic precipitator is used to remove grease and smoke Exhaust fumes extraction from cooking process.  Electrostatic Precipitators include two sections : the charging and the collecting sections. In the charging section, the incoming smoke, grease, mist and other particulates pass by ionizer wires which impart a positive electrical charge to these contaminants. The positively charged contaminants are then drawn through the collection which contains a secondary electrical field with negatively charged aluminum plates. Since opposite charges attract, the positively charged contaminants collect on the negatively charged aluminum plates, removing them from the airstream.

Conveying Ducting

Extracted fumes will be conveyed through GI ducting manufactured by following IS 655 / SMACNA standard. We design a ducting system with minimum pressure drop and avoid any accumulation in ducting. Necessary access and flange joints provided for regular maintenance.

Centrifugal Blower

Caramet Make Fans and blowers are incorporated into Kitchen Ventilation System to help to extract the coking fumes through Kitchen hoods and conveyed through Ducting and ESP unit and exhaust out into outside environment.  Few known types are SISW, DIDW , High Pressure , Redial and Aerofoiled Bladed.
